In the video below he demonstrates how to prepare a raw food diet dish, spaghetti, Chef Sal style. He makes this raw spaghetti using Zucchini, Squash, and Chef Sal’s brilliant add-ons are really creative and fantastic.

Ingredients (Approximate):
For the Spaghetti
1 Yellow Summer Squash
2 Green Zucchinis
Step 1. Use a machine (like a Tri-Blade) to slice the vegetables up into a Spaghetti texture.
Step 2. Flavor Spaghetti with the following items and mix thoroughly:
5 Shakes of Organic Garlic Powder
1 Teaspoon of Himalayan Sea Salt
A little amount of Grape Seed Oil (Check out video link for more detail – a light pour for about 4 seconds)
Step 3. Warm Dehydrator for 10 minutes and then Dehydrate Spaghetti for 20 minutes.
Preparing Pesto
Step 4. In blender, mix the following together.
1 Cup Pine Nuts
1/2 Cup Basil
1/2 Cup Parsley
1/2 Cup Arugula
2 Small Cloves of Garlic
Step 5. Stop and add the following, then continue to blend:
1 teaspoon Lemon Juice
1 teaspoon Pumpkin Seed Oil
Add to taste:
A touch of Cayenne
Lemon juice
Take the Spaghetti Mixture and mix together with the Pesto.
Final Touches
Grate some fresh lemon zest over the finished mixture. You can also put a few small peppers on top of it for an extra kick of flavor! Enjoy!
